[Baking] Durian Butter Cake

The durian session has begun for sometimes. Should you have left over durian, you can think of to this Durian Butter Cake.

Ingredients:
250g Butter
200g Low Gluten Flour, Sieved
200g Caster Sugar
5 Eggs
1/2 Teaspoon Baking Powder
1/4 Teaspoon Sodium Bicarbonate
50g Custard Powder
150g Durian Flesh
4 Tablespoon Milk
40g Medium Gluten Flour, Sieved


Method:
Prepare the ingredients as shown on the right.


Blend the durian flesh with milk.

Add the medium gluten flour into the durian mixture and mix well.

Cream the butter and sugar in the mixing bowl and beat until light and fluffy.
Add the beaten eggs gradually and beat tills well combined.Photobucket
Add the durian mixture and mix till well combined.

Sieved and stir in the low gluten flour, Sodium Bicarbonate, custard powder and baking flour until the ingredients are just combined.Photobucket
Pile the mixture into non-stick cake tin and baked for 45 minutes at 180 degree Celsius, or until the cake is risen and golden. Also, use a skewer inserted into the center and ensure comes out clean.

  2. The photos looks so yummy! I dont like to eat Durian when it is raw but I love Durian pastries. The smell is just right!

    I found a wonderful Durian tart recipe on www.filipinodesserts.net. It is so easy to make!
