Dragon Fruit Jelly Mooncake

The Jelly Mooncake is popular in Malaysia recently. Although the ingredients are simple and easy to find, but due the process of making is slightly complex, hence its pricing still a bit expensive. Have you ever think to made them by yourself? Here are the recipe for your good starting point.

The following recipe can made up to 10 Dragon Fruit Jelly Mooncake.

Ingredients:
10 Jelly Egg Yolk
Filling
(A)
200g Dragon Fruit
1 Tablespoon Agar-agar Powder
250ml Water
60g Fine Granulated Sugar
1 Teaspoon Instant Jelly Powder
(B)
100ml Concentrated Coconut Milk
100ml Milk
Mooncake Skin
300g Dragon Fruit
3 Tablespoon Agar-agar Powder
750ml Water
110g Fine Granulated Sugar
3/4 Tablespoon Instant Jelly Powder

Utensils:
3 2x2 Jelly Moon Cake Pan
10 2" Cup (As Jelly Moon Cake Filling Pan)

Method:
The dragon fruit of ingredients (A) and mooncakes are pureed flesh by a food processor.

Start with making filling, the ingredients (A) into pot and keep on stirring and it boils.

Then the ingredient (B) is add and keep on stirring and it boils, hence discard the heat.

Then pour the filling mixture into the cups about quarterly full. Let them cool for a while, then place the egg yolk in the center. Continue by pour the mixture into the cup until the egg yolk is covered.

Next for making the mooncake skin, the ingredient (B) is add and keep on stirring and it boils. Then pour the skin mixture into the mould about quarterly full.
