[Baking] White Coffee Banana Cake

White coffee is my favor local drink. Should you are coffee addict, you must try this banana cake with coffee favor.

Ingredients:
250g Butter
260g Low Gluten Flour, Sieved
180g Castor Sugar
4 Eggs
1 Teaspoon Baking Powder
1 Teaspoon Sodium Bicarbonate
500g Banana Flesh
1 Teaspoon Salt
150ml Fresh Milk
3 Banana, Peeled and Sliced 3cm thick
1 Tablespoon Flour
1 Pack 3 in 1 White Coffee
1 Tablespoon Boiling Water

Method:
Soak the banana in the 100ml milk, then add 1 tbsp flour and mix well. Mashed the banana with the salt and the left over milk, keep aside. Pour the boiling water into white coffee and mix keep, keep aside.
Cream the butter and sugar in the mixing bowl and beat until light and fluffy.Add the beaten eggs gradually and beat tills well combined.Add the white coffee mixture and mix well.
Mix well the low gluten flour,Baking Powder and Sodium Bicarbonate in advance, keep aside.Add half of the mashed banana into cream mixture and mix well. Fold in half of the flour mixture with spatula in one direction.
Add the left over mashed banana and mix well. Fold in the left over flour mixture with spatula in one direction.Pour the mixture into the cake mold. Topping with sliced banana.Preheat the oven first before baking. Then bake it at 170 degree celcius for 45 minutes.

[Can't Resist] Avacado Salad

I adopted this recipe from one of my friend, Annie. My wife love it so much and I try it made it at home. For variation, the corn flakes can be added.
Ingredients:
1 Mature Avocado
2 Tbsp mayonnaise
1/2 Tbsp Lemon Juice
Sub Ingredients:
2 Green Apple
1/2 Honey Drew
2 Kiwi
1 Tbsp Dried Cranberry
Method:
Cut the avacodo into hald.Remove the seed with a stainless-steel spoon.Scoop the flesh out with a spoon.
Add the flesh into a mixing bowl, mashed it with a gfork.Add the mayonnaise amd mix well.Diced the green apple, honeydew and kiwi, add them into the mashed avacado with dried cranberry and mixed well.
Squeezed the lemon juice into the mixture and mix well. Chill the salad into refrigerator for 2 hour and ready to serve.

[Fruit Bakery] Apple Muffin

The spice has the maggic effect to enhance the favor of apple muffin. Without it, the taste will be sacrificed.

Ingredients:
1 Tbsp Butter
1 Tbsp Brown Sugar
3 Red Apple, Peeled and cubed 1cm
250g Butter
150g Brown Sugar
3 Eggs
300g Low Gluten Flour
2 Tsp Baking Powder
1 Tsp Sodium Bicarbonate
1 Tsp Salt
60ml Fresh Milk
1/2 Tsp Ground Nugmet
1/2 Tsp Ground Cinammon

Method:
Heat up the pan with 1 tbsp butter and brown sugar, simmer it over low heat till the sugar dissolved.Add the diced apple and simmer for 2 minutes over low heat, off the heat and keep aside.Mix the Baking Powder, Sodium Bicarbonate and Baking Powder well in advance.
Cream the butter and brown sugar in the mixing bowl and beat until light and fluffy./td>Add the beaten eggs gradually and beat tills well combined.Add the milk and salt and mix well.
Add the ground nugmet and ground cinammon and mix well.Fold in the flour mixture with spatula in one direction.Add the apple mixture and mix well.
Fill the muffin cup with butter mixture about 80% full . Preheat the oven first before baking. Then bake it at 170 degree celcius for 45 minutes.

[Home Cooked Meal] Braised Spare Rib Fried Rice Vermicelli

To cook a delicious fried rice vermicelli, it is not a difficult deal. I have learned the recipe from my mother and I would like to share with you.
Ingredients:
400g Coarse Rice Vermicelli, soaked in cool water for 30 minutes, removed and to be served
3 Egg, Beaten
1 Can Braised Spare Rib
8 Shallot, Peeled and Sliced
1 Teaspoon, Chopped Garlic
150g Flowering Chinese cabbage, Shredded
200ml Boiled Water

Seasonings:
3 Tablespoon Dark Soy Bean Sauce
2 Tablespoon Light Soy Bean Sauce
A pinch of Salt
A pinch of ground white pepper

Method:
Heat up the 1 1tbsp cooking oil into the frying pan, add in shallot amd stir-fried till it turns light light brown.Beat the egg into a bowl and seasoning with some white ground pepper and soy sauce, keep aside.Remove the brown shallot and add into the egg mixture, gently stir and mix well.Pour in the egg mixture into center of frying pan, heat it up over low heat till it appear condensed.
Broken the egg and remove it from the pan, keep aside.Use the same pan, heat up with 1 tbsp of cooking oil and add in chopped garlic and stir-fry until it turns light brown.Add the braised spare rin and bring it to a boil over high heat.Add the rice vermicelli, soy sauce and boiling water in order, stir-fry the rice vermicelli appear to be soft and almost dried over medium heat.
Add the flowering chinese cabbage and stir-fry for 10 seconds.Add the stir-fried egg and seasoning to taste, remove it and served.
