[Dessert] Sweet Basil Mashed Potato

Have you ever tried the basil favor mashed potato? Here is the opportunity for you to enjoy it.

Ingredients:
50g Sweet Basil Leaf
300g Potato, Peeled and Cut into Pieced
80g Cheddar Cheese, Grated

(Seasoning)
Just a Pinch of Pepper Powder
Just a Pinch of Salt
1 Tablespoon Butter
2 Tablespoon Milk

Method:
Place sweet basil and a litte waterin a blender and blend until smooth.
Grate the cheddar cheese, serve aside.
Steam the potato for 10 minutes or until tender.
Steamed potato to be processed.
Mash the potato by using Potato Masher.Add the seasoning and mix well.
Add the sweet basil and mix well.
Last, add the cheddar cheese and mix well.
Place the mashed potato in a bowl and enjoy it.

Meringue Italienne

This white frosting is used for topping cake which include cup cake as well. It is white color and always good for decoration or topping.

Ingredients:
3 Egg White
180g Caster Sugar
60ml Water

Method:
Heat the water and caster sugar over medium heat.
While the syrup is going to boil, add the egg white into mixing bowl and whisk it.Heat the syrup to 120 degree Celcius. Add the syrup fradually to the egg white and continue whisk.
When the temperature of egg and mixing bowl is about equal, the Meringue Italienne is done.

[Instant] Curry Chicken

It is simple to prepare curry chicken at home nowadays. All you need is just the Instant Sauce and you can made a absolutely delicious chicken.

Ingredients:
2 Chicken Thigh, Cut into Pieced
3 Potato, Peeled and Cut into Pieced
1 Pack of Tean's Gourmet Curry Chicken Instant Sauce
300ml Boiled Water
250ml Coconut Milk

Method:
Heat 1 teaspoon of cooking oil into a pan .Add chicken thigh and curry instant sauce, stir-fry till fragrant and the meat in firm.Add the potato.
Stir-fry for another 5 minutes.
Add the boiled water and bring to boil, continue to cook for another 20 minutes with medium heat.
Add the coconut milk and bring to boil again. Serve hot with white rice or tumeric rice.

[Nyonya] Tamarind (Assam) Prawn

It is always can't resist the sour and sweet of Tamarind Prawn with white rice.

Ingredients:
10 Medium Prawn

Marinated Sauce
:
1/4 Teaspoon Salt
1/2 Teaspoon Black Bean Sauce
1/2 Teaspoon Sugar
50g Tamarind Paste
50ml Water

Method:
Rub the prawn with marinated sauce and set aside for about 30 minutes.Heat 1 teaspoon of cooking oil into the frying pan .Add the prawn together with marinated sauce and stir-fried for 3 minutes with high heat. Serve it white rice.

[Nyonya] Assam Curry Fish (Asam Kari Ikan)

Assam Curry Fish is one of my favorite dish. With the ready curry paste, it is easier to prepare in less than 1 hour.
Ingredients:
250g Grouper Fillet
1 Red Onion, Cut into Sliced
1 Pack of Tean's Gourmet Assam Fish Paste
2 Round Eggplant, Cut into Pieced
2 Tomato, Cut into Pieced
300ml Boiled Water

Method:
Rub the fish with lemon juice and set aside for 5 minutes.
Cut the tomato and round eggplant into pieced.
Heat 1 teaspoon of cooking oil into the frying pan, stirring the onion and fish paste until tender.
Add the boiled water and bring to boil.Add the fish and simmer for 5 minutes Add the tomato and round eggplant and simmer for 10 minutes. Serve it with white rice.

[Deep Fried] Cook's Frying Powder

Here is the recommended Frying Powder for serve crispy food.

Ingredients:
245g Cook's Frying Powder
10 Tablespoon Cooking Oil
6 Tablespoon Water
Seasoning (Meat):
1/8 Teaspoon Salt
1/8 Teaspoon Pepper Powder

Method:
Add the cooking oil into Cook's Frying Powder and mix well. Add the water and mix well. Add the seasoning if prepare deep fried meat. Set a side for 15 minutes and ready to use.

[Baking] Double Chocolate Chips Muffin

Chocolate Chips Muffin
This Double Chocolate Chips Muffin is one of favorite of my beloved.^^

Ingredients:
100g Butter
150g Caster Sugar
2 Egg
100ml Milk
20g Chocolate Powder
100g Chocolate Chips
160g Low Gluten Flour, Sieved
1 Teaspoon Baking Powder

Utensils:
10 Muffin Cups

Method:
Preheat oven to 170 degrees Celcius. Prepare the ingredients as shown on the right.
