[Chinese New Year Cookies] Pineapple Cookies

With the homemade pineapple filling to made the pineapple cookies, it is absolutely delicious without doubt.

Ingredients:
500g Pineapple Filling
500g Flour
275g Butter, cubed
1 Tbsp Icing Sugar
1 Tbsp Custard Powder
1 Egg
1 Egg Yolk
Method:
Roll the pineapple filling into small ball. Each one is about 10g.Beat the egg yolk into a bowl and prepare the brush as shown above.
Sift the flour into a tray. Add the icing sugar and custard powder and mix well.Add the butter into the flour mixture and mix well by cutting the butter on flour.Add the chicken egg into center of mixture.
Cover the chicken egg with the mixture.Knead the mixture into a dough.Remove partial of the mixture and roll it into a diameter 3-4cm, further divide into small portion.
Roll the divided mixture into a small ball.Roll the small ball mixture into  round and think shape, add a pineapple jam ball into center of it.Seal the filling with the flour mixture.
Roll the mixture into pineapple shape. Made the line on the surface of cookies so that it looks like a pineapple. Coat the cookies with a think egg yolk.Preheat the oven first before baking. Then bake it at 170 degree celcius for 25-30 minutes. Keep them into a container once they cool down to room temperature.

[Chinese New Year Cookies] Peanut Cookies

Peanut Cookies is one of popular Chinese New Year cookies and it is easy to prepare. Should you looking for recipe to start making the cookies, peanut cookies would be strongly recommended.

Ingredients:
500g Medium Gluten Flour
500g Roasted Ground Peanut
250g Icing Sugar
330ml Peanut Oil
1 Tsp Salt
200g Roasted Peanuts, Peel into half
2 Egg Yolk

Method:
Sieved the flour into a mixing bowl.Add the icing sugar and salt and mix well.Add the roasted ground peanut and mix well.
Add the oil gradually and knead it into a dough.Beat the egg yolk into a bowl and prepare the brush as shown.Roll the dough into small ball and place them on a tray. Keep a distance apart each other.
Put a roasted peanut on top of each cookies.Brush each cookie with egg yolk.Preheat the oven first before baking. Then bake it at 170 degree celcius for 15-20 minutes. Keep them into a container once they cool down to room temperature.

[Chinese New Year Cookies] Deep Fried Arrowhead Chips

Arrowhead chips have been popular in Malaysia for several years, especially during chinese new years. It is difficult to stop your mouth once you tried it.

Ingredients:
2kg Arrowhead
1Liter  Deep Friying Oil
Method:
Peel the arrowhead and keep them in the refrigerator for overnight.Take the arrowhead from refrigerator and leave it at room temperature for 1 hour. Prepare the vegetable slicer as shown.Heat up the deep frying oil in a deep pot and bring it to 160 degree Celcuis, and change to low heat immediately once it reach.
Slice the arrowhead into oil directly.When the arrowhead is sliced to almost at top, hold the tail of arrowhead to finish till end.There will be a lot of bubbles when the arrow head are deep fried at the beginning.
Use the bamboo stick to keep the arrowhead apart to each other.When the color arrowhead start changing from white to golden brown, it is ready to remove the arrowhead. Remove the arrowhead from deep pot.
Drain on kitchen towel to remove excess oil.Lower the heat further if the edge of arrowhead became dark brown when start deep frying.
