[Baking] Tiger Stripe Butter Cake

For the variation of marble butter cake, tiger stripe is another option of the butter cake.

Ingredients:
250g Butter
220g Low Gluten Flour, Sieved
220g Castor Sugar
4 Eggs
1 Teaspoon Baking Powder
1 Teaspoon Vanilla Essence
125ml Milk
2 Tbsp Cocoa Powder

Method:
Place butter and caster sugar into the mixing bowl, beat until light and fluffy.Beat in one egg at one time, beating well after each addition.Add the vanilla essence and mix well.
Add the milk and mix well.Fold in the flour and baking powder with spatula in one direction, either clockwise or anti-clockwise.Divide the mixture into 2 portions. Keep one portions without adding anything.
Add the cocoa powder into another mixture and mix well.Grease the cake mold in advance. Pour in 3 tbsp original mixture into the center of mold. and continue with another 3 tbsp of cocoa flavor mixture. Repeat the step for the left over of mixture. Preheat the oven first before baking. Then bake it at 170 degree celcius for 45 minutes, or until a toothpick inserted into the center comes out clean.

[Baking] White Coffee Banana Cake

White coffee is my favor local drink. Should you are coffee addict, you must try this banana cake with coffee favor.

Ingredients:
250g Butter
260g Low Gluten Flour, Sieved
180g Castor Sugar
4 Eggs
1 Teaspoon Baking Powder
1 Teaspoon Sodium Bicarbonate
500g Banana Flesh
1 Teaspoon Salt
150ml Fresh Milk
3 Banana, Peeled and Sliced 3cm thick
1 Tablespoon Flour
1 Pack 3 in 1 White Coffee
1 Tablespoon Boiling Water

Method:
Soak the banana in the 100ml milk, then add 1 tbsp flour and mix well. Mashed the banana with the salt and the left over milk, keep aside. Pour the boiling water into white coffee and mix keep, keep aside.
Cream the butter and sugar in the mixing bowl and beat until light and fluffy.Add the beaten eggs gradually and beat tills well combined.Add the white coffee mixture and mix well.
Mix well the low gluten flour,Baking Powder and Sodium Bicarbonate in advance, keep aside.Add half of the mashed banana into cream mixture and mix well. Fold in half of the flour mixture with spatula in one direction.
Add the left over mashed banana and mix well. Fold in the left over flour mixture with spatula in one direction.Pour the mixture into the cake mold. Topping with sliced banana.Preheat the oven first before baking. Then bake it at 170 degree celcius for 45 minutes.

[Golden] Pumpkin Butter Cake

Pumpkin is a common ingredient which could made varies dishes. By using it to bake a butter cake, the sweetness of pumpkin is unforgettable.

Ingredients:
400g Pumpkin
250g Butter
150g Brown Sugar
3 Eggs
300g Flour
1 Tsp Baking Powder
1 Tsp Sodium Bicarbonate
1 Tsp Salt
1 Tsp Vanilla Essence
60ml Fresh Milk
1/2 Tsp Ground Nugmet
1/2 Tsp Ground Cinammon

Method:
Peel the pumpkin, seeded and cut into pieced.Steam the pumpkin for 12 minutes or till tender.Mashed the pumpkin with mashed potato masher, keep aside.
Mix well the flour,Baking Powder,Sodium Bicarbonate, Ground Nugmet and Ground Cinammon in advance, keep aside.Grease the cake mold in advance. Preheat the oven first before baking.
Cream the butter and brown sugar in the mixing bowl and beat until light and fluffyAdd the beaten eggs gradually and beat tills well combined.Add the milk, salt, vanilla essense and mix well.
Add the mashed pumpkin and mix well.Fold in the flour mixture with spatula in one direction.。Pour the mixture into the cake mold. Then bake it at 170 degree celcius for 45 minutes.

[Baking] Jaggery Banana Cake

By replacing the caster sugar with jaggery to bake the banana butter cake, I have been impressed by its taste.

Ingredients:
250g Butter
260g Low Gluten Flour
180g Jaggery
4 Eggs
1 Teaspoon Baking Powder
1 Teaspoon Vanilla Essense
1 Teaspoon Sodium Bicarbonate
500g Banana Flesh
1 Teaspoon Salt
150ml Fresh Milk

Method:
Soak banana in the milk, mash it well with a fork by adding salt.Beat the butter and gaggery until later dissolve completely.Add the beaten eggs gradually, and cream till smooth and light.
Add the vanilla essence and mix well.Mix the Baking Powder, Sodium Bicarbonate and Baking Powder well in advance. Fold in them with spatula in one direction.Add half of the banana and mix well.
Repeat the previous 2 step for the remaining flour mixture and banana.Grease the cake mold in advance.Pour the mixture into the cake mold. Preheat the oven first before baking. Then bake it at 170 degree celcius for 45 minutes.

[Baking] Marble Butter Cake II

It is my favourite marble butter cake again. I have add the milk to this cake to made it more soften.

Ingredients:
250g Butter
210g Low Gluten Flour
200g Caster Sugar
5 Eggs
1/2 Teaspoon Baking Powder
20g Chocolate Powder
2 Tablespoon Milk

Method:
Prepare the ingredients as shown on the right.

Cream the butter until soft.

Add sugar in the mixing bowl and beat until light and fluffy.。
Add the beaten eggs gradually and beat tills well combined.Photobucket
Add the milk and mix well.

Sieved and stir in the low gluten flour and baking powder until the ingredients are just combined.Photobucket
Remove the 1/3 mixture from bowl. Pour the chocolate powder into it and mix well.

Pour remaining 2/3 mixture into cake pan then continue by the chocolate mixture.Photobucket
Use the folk to beat the mixture lightly to made the "marble" effect. Bake at 180 degree celcius for 45-50 minutes.Photobucket
