[Home Cooked Meal] Steamed Minced Pork with Egg

Mum always made this meal when she was busy. It is simple to cook and can prepare it parallel with rice. Other than chicken egg, it can be replaced by salted duck egg.
Ingredients:
200g Minced Pork
1/4 Carrot, Peeled & Stripped
1 chicken egg
Seasonings:
1/8 tsp ground white pepper
1/2 tbsp soy sauce
Method:
Beat a egg into a bowl, add the minced pork, carrot , seasoning and mix well. Place the bowl into a rice cooker and cook with rice, once the rice is done, removed minced pork and serve it hot.

[Home Cooked Meal] Braised Spare Rib Fried Rice Vermicelli

To cook a delicious fried rice vermicelli, it is not a difficult deal. I have learned the recipe from my mother and I would like to share with you.
Ingredients:
400g Coarse Rice Vermicelli, soaked in cool water for 30 minutes, removed and to be served
3 Egg, Beaten
1 Can Braised Spare Rib
8 Shallot, Peeled and Sliced
1 Teaspoon, Chopped Garlic
150g Flowering Chinese cabbage, Shredded
200ml Boiled Water

Seasonings:
3 Tablespoon Dark Soy Bean Sauce
2 Tablespoon Light Soy Bean Sauce
A pinch of Salt
A pinch of ground white pepper

Method:
Heat up the 1 1tbsp cooking oil into the frying pan, add in shallot amd stir-fried till it turns light light brown.Beat the egg into a bowl and seasoning with some white ground pepper and soy sauce, keep aside.Remove the brown shallot and add into the egg mixture, gently stir and mix well.Pour in the egg mixture into center of frying pan, heat it up over low heat till it appear condensed.
Broken the egg and remove it from the pan, keep aside.Use the same pan, heat up with 1 tbsp of cooking oil and add in chopped garlic and stir-fry until it turns light brown.Add the braised spare rin and bring it to a boil over high heat.Add the rice vermicelli, soy sauce and boiling water in order, stir-fry the rice vermicelli appear to be soft and almost dried over medium heat.
Add the flowering chinese cabbage and stir-fry for 10 seconds.Add the stir-fried egg and seasoning to taste, remove it and served.

[Home Cooked Meal] Eggs and Mint Leaves Soup

Eggs and mint leaves soup is yummy and best served with steam white rice.

Ingredients:
20g Mint Leaves
2 Chicken Egg
50g Dried Anchovies(Ikan Bilis)
1.5L Boiled water
1 Tbsp Garlic Oil
Seasonings:
Some Salt
Some Ground White Pepper
Method:
Rinsed the mint leaves and drained, keep aside; beat the egg into a bowl and genltly stir, keep aside.Pour water into a deep pot, add the filter bag with pre-fill dried anchovies and bring it to a boil, simmer it for 15 minutes.Remove the filter bag and throw away.
Add the egg into soup till it appear condensed.Add the mint leaves and simmer it for 10 seconds.Add in seasoning into soup to taste. Remove the soup into a bowl, ganish it with fried garlic oil and serve it.

[Home Cooked Meal] Watercress and Pork Spare Rib Soup

The watercress and pork spare rib soup is one of the best option in case you just wish to prepare a single meal in a day.
Ingredients:
300g Pork Spare Rib, Cut in pieces, rinsed & drained
300g Watercress, Cut into pieced, rinsed and drained
5 Garlic Cloves, Peeled
2 Liter Boiled Water
Seasonings:
1/2 TspSalt
1/8 Tsp White Ground Pepper
Method:
Bring a pot of water to a boiled, boil the spare rib for 3 minutes. Remove and rinse under running water. Drain and keep aside.Pour in the boiled water into a soup pot, add the spare rib and garlic and bring a boiled, simmer for 60 minutes over low heat.Add the Watercress and simmer for 15 minutes.Add the seasoning to taste. Dish up and serve it hot with white rice.

[Favorite Home Cooked Meal] Pork Braised in Soy Sauce (Tau Yu Bak)

"Tau Yu Bak" is one of the well known home cooked meal. Every mothers always like to cook this meal for their kids. It is not difficult to prepare and you can made it whenever you like to have it.

Ingredients:
400g Pork Belly, Cut into Bite Size
1 White Galic
1 Cinnamon
3 Star Anise
1.5L Water
4 Hard Boiled Egg

Seasonings:
2 Tbsp Dark Soy Sauce
3 Tbsp Light Soy Sauce
1/2 Tbsp White Sugar
1/4 Tsp Ground White Pepper

Method:
Add the water, garlic and both soy sauce into a soup pot and bring to a boiled.Add in the pork belly, cinnamon ,star anise and bring to a boiled, simmer it for 30 minutes over low heat.Add in the hard boiled egg and simmer for anohter 10 minutes. Add the seasoning to taste. Dish up and serve it rice.

[How To Made Soup Stock] Dried Anchovies (Ikan Bilis) Stock

To prepare a delicious and healthy soup stock has never simple by using the dried anchovies. For the best result, use the only the dried anchovies with head off.

Ingredients:
200g Dried Anchovies(Ikan Bilis)
10 Garlic Clove (Skinned)
2 Liter Water

Method:
Rinse the dried anchovies and drain the water.Bringing water to the boil, add dried anchovies and garlic clove, simmer for 45 minutes. Turn off heat and remove the dried anchovies. Ready to be used.

[Nyonya] Tamarind (Assam) Prawn

It is always can't resist the sour and sweet of Tamarind Prawn with white rice.

Ingredients:
10 Medium Prawn

Marinated Sauce
:
1/4 Teaspoon Salt
1/2 Teaspoon Black Bean Sauce
1/2 Teaspoon Sugar
50g Tamarind Paste
50ml Water

Method:
Rub the prawn with marinated sauce and set aside for about 30 minutes.Heat 1 teaspoon of cooking oil into the frying pan .Add the prawn together with marinated sauce and stir-fried for 3 minutes with high heat. Serve it white rice.

[Malaysian Food] - Turmeric Fried Fish

A simple and delicious fried fish with ground turmeric. The yellow and brown grouper fillet is best served with white rice.

Ingredients:
250g Grouper Fillet

Marinated Sauce:
1 Teaspoon Turmeric Powder
1/2 Teaspoon Salt
2 Tablespoon Lemon Juice

Method:
Rub the fish with marinated sauce and set aside for about 30 minutes.
Heat 1 teaspoon of cooking oil into the frying pan .
Add the grouper fillet to the pan and brown well.
Brown well on the other side as well. Serve it with white rice.
